Permaculture Design Principles in Gastronomy: An Integrated Approach to Biodiversity and Sustainability from Theory to Practice

Öz

This study examines how permaculture design principles can be integrated into gastronomic practices to advance sustainability and biodiversity. Permaculture, a holistic design philosophy that models natural ecosystems, supports cyclical and efficient use of soil, water, and biological resources, and offers an ethical, ecological, and economic framework for gastronomy. Using Türkiye-based permaculture applications, the study analyses reflections in the food and beverage sector, focusing on restaurant models and local production systems. Findings suggest that permaculture-informed practices help preserve local culinary heritage, strengthen biodiversity via pollinator-friendly planting, and provide a feasible basis for nature-compatible urban and rural gastronomy initiatives. Results also show that integration is possible beyond rural settings through rooftop gardens, hydroponics, and circular waste management. The study concludes with recommendations for education, policy support, and public awareness to scale adoption, aligning with SDGs on food security, responsible production, and climate action.
